Seeking to create food that is both nourishing and tasty, Dick Trotter and his wife Pat opened Trotter's Café in St. Paul. That was almost twenty years ago and Trotter's still dishes up a diverse array of food, much of it grown locally and all of it prepared from scratch. Dick and Pat are very conscientious about where their food is sourced from and they maintain a commitment to reducing waste and encouraging guests and employees to reuse and recycle.

Paul Otten of Natura Farms in Marine on St. Croix is also fervently dedicated to producing healthy food. Everything he does on the farm is with an eye to seeing that the soil is nutrient-rich so that these nutrients can be absorbed into the produce and finally reach the consumer. "We are largely on the same page when it comes to the function and value of genuine food," Paul says of the Trotters, who affirm their philosophy of supporting and giving back to the local community by purchasing from local producers like Paul.

As Dick and Pat continue to serve nutritious and delicious food and Paul, a Food Alliance Certified grower, continues to nurture the nutrients in his soil, patrons keep returning. These loyal customers are certainly a tribute to the Trotters' and Paul's commitment to simple, delicious, and healthy food.
